Two bite brownies are one of those childhood treats that my mom would never let me buy. The only time I got my hands on them was probably a birthday party, or some kind of party buffet table of desserts. While the traditional store bought version is delicious, they are also deadly little sugar, fat, and calorie bombs which normally end up leaving me with an upset stomach.
As an adult I prefer to find ways to indulge my chocolate cravings on the daily, with healthier alternatives. My two bite brownie recipe is definitely healthy enough to eat on the daily with zero guilt, and no post brownie binge remorse.
-1 Cup Pumpkin Puree
-3 Scoops Protein Powder *Plant Based or Whey
*If you use plant based protein add in 1/4-1/2 cup of dairy free milk because the plant based proteins usually have a thickener in it.
-1 Tiny Pinch of Sea Salt
-1/8 tsp baking powder
-1/4 Cup Cocoa Powder
-1 TBS Swerve Sweetener or Sugar Free Syrup
*If you use granulated sweetener add in an 1 Extra TBS of dairy free milk
-Mix it all together
-Divide the batter into six equal portions, and pour into a greased nonstick cupcake pan.
Bake @ 375 for 9 Min
Make sure to remove the brownies from the pan, and cool right away so they don't overcook. I like to leave them a little underdone in the centre so they stay moist, and chewy.
Store them in the fridge, in a Tupperware container for up to a week.
Toppings: These pair perfectly with some almond, or peanut butter.
