Healthy Blueberry Lemon Muffins 💕

Makes 12 Little Muffins

Bake at 350 For 18-20 Min


1 Avocado Mashed

1/2 Banana Mashed

1 Egg

3 Egg Whites

3 TBS GHEE or Coconut Oil

3 TBS Peanut Butter

1/4-1/2 Cup Unsweetened Dairy Free Milk * Add 1/4 Cup first and only add more if needed after dry ingredients

1/2 TSP Vanilla Extract

1-2TBS Lemon Juice

1/2 TBS Lemon Rind


1 TSP Baking Soda

1/8 TSP Sea Salt

1/8 TSP Cinnamon

2 Scoops Aura Nutrition Plant Based Protein

1 Cup Oat Flour * I just blended 1 cup of oats in my vitamix

3/4 Cup Frozen or Fresh Blueberries * Add in last


1. Mix/Mash all your wet ingredients in a large bowl

2. Blend your oat flour, and add long with all the dry ingredients to the wet ingredients

3. Mix together, and add in additional dairy free milk if needed

4. Gently fold in blueberries last so you don't turn all your muffins purple

5. Spoon the batter into 12 non stick/greased little muffin trays

6. Bake at 350 for 18-20 min

Tip: Check muffins at about 14/15 min with a knife or toothpick in the centre to see if they are dry in the centre. Bake until the knife comes out pretty clean and dry. Do not over cook them or they will dry out and get hard.
