Nobody wants to eat plain chicken, yams, and broccoli every night. I think a lot of the reason I stay disciplined with my nutrition is I actually enjoy the food I eat on a regular basis. Finding creative recipes, and flavours you enjoy will make clean eating a habit you can keep up with for more than a week. Try this this quick, and easy on a busy weeknight and you will have a delicious dinner, and leftovers ready in 20 min or less! Asian Ground Turkey Lettuce Wraps
For the turkey mixture
1 teaspoon sesame oil or olive oil
1 yellow onion, chopped
3″ long piece of ginger, peeled and chopped
1 teaspoon salt
1 teaspoon pepper
2 garlic cloves, minced
1 pound ground turkey
1/4 Bragg soy seasoning
1 Avocado
Cilantro
Toppings
1 head butter, iceberg, or romaine lettuce
3 green onions, sliced
1 cup shredded carrots
Small handful of diced cilantro
Sweet Chilli Sauce
1 Diced Avocado
Sriracha (Optional)
In a medium size skillet, heat the oil over medium high heat. Add in the onions, ginger, salt and pepper, cooking until the onion starts to turn translucent, about 5 minutes. Add in the garlic and cook for 1 more minute.
Add the ground turkey to the same skillet along with the onions, garlic and ginger, breaking it up as it cooks, about 10 minutes. Add in the 1/4 Bragg soy sauce, turn the heat up to high until all of the soy sauce is absorbed. Remove from heat and allow to cool for 5 minutes.
Spoon the cooled ground turkey into the lettuce cups and top with avocado, green onions, sweet chilli sauce, and cilantro.
4.The turkey mixture will keep in an airtight container for 1 week in the fridge.
Makes 4 servings, save the leftovers for lunch and make an a yummy salad!
